Ramps are a delicious first spring edible that comes up before forest canopies fill out. Look out for the signature eye shaped leaf, it will probably be some of the first green you'll see in the forest. They have a delicious but lite taste, related to onions and garlic. This recipe is a fun way to eat ramps raw. They add a lite savory element, and while you could use onions and garlic In my opinion the taste of the ramps is superior.
To Begin you'll need.....
3 Cups Soaked Walnuts
10 stalks Celery
6 Ramps*
3 Tablespoons Kelp
1 Tablespoon Dulse
1.5 Tablespoons Salt
1 Tablespoon Cumin
1/2 teaspoon cayenne
3/4 Cup Olive Oil
In a Food Processor Rough Chop the Ramps and Celery
Put in a bowl Aside
Process all the other ingredients until creamy and smooth.
Combine with rough chopped celery and onions.
Serve on a Leaf of Fresh Garden Lettuce, garnish with chopped tomato and sprouts.
*if Ramps aren't in season you could substitute 1/2 cup onion and 5 cloves garlic
